Skinny Southern Baking is a wonderful resource if you’d like to make your favorite baked goods in a way you can feel good about. I made these warm spiced ginger molasses cookies made with almond flour and coconut sugar. So good with a warm cup of tea. What I noticed was with each bite I didn’t feel any sort of sugar spike and since they are free from gluten and low carb, they felt like a healthy treat without guilt. So easy to stir together, no mixer needed.
Ginger Cookies
2 1/4 c. almond flour (tightly packed)
1/2 c. coconut sugar
1/2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ground cloves
2 tsp. ground ginger
3 eggs
1/4 c. molasses
1/4 c. coconut oil
Pre-heat oven to 350 degrees and line a baking sheet with parchment paper. Combine dry ingredients and break up any clumps in the flour or sugar with a fork. In a separate bowl, mix the wet ingredients. Slowly stir the wet ingredients into the dry ingredients and mix well. Share the cookies into circles and arrange them on the baking sheet. Bake for 12-15 minutes. Cool completely and enjoy!
