  • 2 scoops Shaklee Vanilla Life Shake or
    2 Scoops Shaklee Chocolate Life Shake
  • 10 oz. milk of your choice or water
  • a handful of organic raw cocoa nibs.  ( If using the Vanilla life shake )
  • 2 tablespoons of peanut butter –
    alternative to peanut butter is PBfit Peanut Butter Powder
  • 1/2 frozen banana
  • handful of ice

Bananas – once ripened, peel and cut in half and store in freezer. a great way to add more smooth to your smoothies.

These BEAUTIFUL Butterscotch Pears are from Melissa’s Produce. They are such precious cargo that they are sold in these cozy little jackets. In season now and ready for you to eat straight up in their crunchy sweetness or bake lovely treats like this bread pudding. My husband loved it. We ate it directly from the baking pan and again the next morning griddled up like French Toast!

Butterscotch Pear Bread Pudding

A decadent and delicious Butterscotch Pear Bread Pudding

INGREDIENTS

  • 4 tbsp Butter
  • 3/4 cup granulated sugar divided
  • 3 each large Butterscotch Pears
  • 6 cups stale brioche bread cut into cubes
  • 2 cups half & half
  • 1/2 cup milk
  • 4 each eggs
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt

INSTRUCTIONS

  • Preheat oven to 325°F. Spray an 8X8 baking dish with cooking spray and set aside
  • Melt butter in a large skillet over medium heat. Add ½ cup sugar and stir until combined. Add pear slices in an even layer. Cook, without stirring for 8 minutes until the fruit begins to caramelize. Flip slices and cook for 5-8 minutes longer until both the fruit and the caramel are golden brown
  • Meanwhile, prepare the custard by whisking together remaining ¼ cup sugar, half and half, milk, eggs, vanilla, cinnamon and salt.
  • Spread the bread cubes into the prepared pan. Pour custard mixture over the bread. Press down to make sure all cubes are soaked.
  • Layer pear slices evenly over the top of the bread mixture. Top with remaining caramel from the skillet.
  • Bake for 55-65 minutes until fully set. Serve dusted with powdered sugar.

Skinny Southern Baking is a wonderful resource if you’d like to make your favorite baked goods in a way you can feel good about. I made these warm spiced ginger molasses cookies made with almond flour and coconut sugar. So good with a warm cup of tea. What I noticed was with each bite I didn’t feel any sort of sugar spike and since they are free from gluten and low carb, they felt like a healthy treat without guilt. So easy to stir together, no mixer needed.

Ginger Cookies

2 1/4 c. almond flour (tightly packed)

1/2 c. coconut sugar

1/2 tsp. baking powder

1/4 tsp. baking soda

1 tsp. cinnamon

1 tsp. nutmeg

1 tsp. ground cloves

2 tsp. ground ginger

3 eggs

1/4 c. molasses

1/4 c. coconut oil

Pre-heat oven to 350 degrees and line a baking sheet with parchment paper. Combine dry ingredients and break up any clumps in the flour or sugar with a fork. In a separate bowl, mix the wet ingredients. Slowly stir the wet ingredients into the dry ingredients and mix well. Share the cookies into circles and arrange them on the baking sheet. Bake for 12-15 minutes. Cool completely and enjoy!
